This tortellini salad post is long overdue. It’s my Aunt Anna’s recipe. I posted a picture of it on Thanksgiving and was flooded with requests. I could make loads of excuses, but… nah. I’m watching the Olympics and I’m super anxious hoping someone doesn’t land the wrong way on a balance beam.
I can usually multi-task when I’m watching a show or movie, but with Olympics I get so dang tense; my shoulders hurt and I can’t focus much. Anyway, I can’t believe I didn’t make this sooner. It’s so easy! . Enjoy!
Ingredients for Tortellini Salad:
18 oz cheese tortellini
2 small or 1 large broccoli crown, chopped into mini florets
1/2 medium onion, finely chopped
1 tomato, seeded and diced
1/2 cup shredded parmesan
1/2 cup Creamy Caesar dressing or to taste
How to Make Tortellini Salad:
1. Chop broccoli into small florets. The Vidalia Chop Wizard
2. Finely chop onion.
3. Seed and chop the tomato.
4. Cook cheese tortellini according to the instructions on the package (salt the water). I like to overcook mine a tad. Rinse with cold water to cool them down.
5. Top with parmesan cheese
6. Mix all the ingredients and add Caesar dressing to taste (I added a litte more than 1/2 cup Ceasar dressing)

Chop brocolli into small florets. Finely chop onion, than seed and chop the tomato.

Cook cheese toretlini according to the instructions on the package (salt the water). Rinse with cold water to cool them down. Top with parmesan cheese.

Mix all the ingredients and add ceasar dressing to taste.
