This Spinach Strawberry Salad always shows up at church potlucks and family dinners. It is a simple and absolutely delicious strawberry spinach salad.
My sister Svetlana is a very creative and talented cosmetologist (hair stylist) and cook! She made this amazing Spinach Strawberry Salad for a family dinner a couple weeks ago and it’s quickly become my new favorite salad recipe. She made it again this weekend when we had family visiting from Washington and everyone was raving about it!
Here’s a tip: I’ve already tried it with red onion and found it to be overpowering, but the green onion/ chives are perfect! Hope you and your family enjoy this simple, yet tantalizingly good strawberry spinach salad.
Spinach Strawberry Salad Ingredients:
1 lb fresh Spinach
2-3 cups of fresh sliced strawberries
3 Tbsp chopped green onions or chives
Poppy Seed Dressing Ingredients:
1 cup of mayo
1.5 Tbsp poppy seeds, rinsed and drained
2 Tbsp of vinegar
1/3 cup of sugar
How to Make Spinach Strawberry Salad:
1. Combine all of the dressing ingredients (mayo, poppy seeds, vinegar and sugar) and mix until well combined. Refrigerate until ready to use.
2. Wash and dry spinach, then place it into a large bowl. Slice strawberries and add them to a bowl as well.
4. Sprinkle chopped green onion over salad and mix in prepped dressing to taste (you may not use all of it – and that’s ok).
