Process

  1. Preheat oven to 425˚F. Pour all sweet potato ingredients into a mixing bowl and toss together until fully and evenly coated.
  2. Spread sweet potatoes onto a baking sheet, in a single layer.
  1. Roast for 22 to 28 minutes, tossing every 8 to 10 minutes. Once sweet potatoes are tender, remove from oven and cool.
  2. Place all seasoning ingredients into a bowl and stir together.
  1. Place a large skillet over medium heat. Once skillet is hot add oil and shallot. Sauté shallot for 2 to 3 minutes, until lightly caramelized and browned on the edges.
  2. Add ground beef and garlic and break up until evenly crumbled.
  1. Sprinkle taco seasoning over beef and stir together for 1 minute or until beef has browned.
  2. Add tomato paste and water and stir together. Season with salt and pepper as needed and stir. Lower heat to medium-low and cook for an additional 1 to 2 minutes or until mixture thickens, stirring occasionally. Remove from heat set aside.

Assembly

  1. Place 1/4 ground beef mixture into each bowl and divide sweet potatoes between the bowls.
  2. Top sweet potatoes with remaining ground beef mixture.
  1. Scoop cottage cheese into each bowl and top with sliced avocado.
  2. Top bowl with pepitas and hemp hearts.
  1. Finish with a drizzle of hot honey and a sprinkle of minced cilantro.

Tips and Tricks for Beef Protein Bowl Success

  • For perfectly caramelized and crisp sweet potatoes, cut them as uniformly as you can, avoid overcrowding the pan, and be sure to flip them every 8 to 10 minutes so each side gets nice and browned.
  • If your ground beef mixture is too watery after adding the tomato paste and water, just continue to stir over the heat until it thickens.
