The Best Peach Cucumber Salad for Summertime

If you’ve been around here for a while, you know I’m all about easy, fresh recipes, especially when the summer produce is shining. This Peach Cucumber Salad has become one of our go-to sides when the weather is warm and the peaches are perfectly ripe. It’s crisp, juicy, a little sweet, and super refreshing. Basically, everything you want on a hot day.

We have two peach trees in our yard, so when they’re bursting with ripe fruit, this salad is on repeat. It’s one of my favorite ways to put those juicy summer peaches to good use. It’s such a simple salad, just slice, whisk, toss, and you’re done!

It’s such a simple salad, but the flavors really pop; sweet peaches, cool cucumber, fresh herbs, and that tangy honey-lime dressing. SO good!

It’s also super versatile. It pairs perfectly with grilled chicken, salmon, or burgers, and makes a fresh addition to any summer BBQ or picnic. I also love it spooned over crusty bread with whipped feta or whipped cottage cheese. You can also bulk up the salad with your favorite greens or grains for a light lunch.

For the Salad:

  • Peaches: Choose ripe but firm peaches for the best texture and flavor. If you don’t have peaches, nectarines will also work.
  • English cucumber: Thinly sliced for a nice crunch without too many seeds. No need to peel!
  • Green onions: They add just the right bite without overpowering the salad.
  • Herbs: Fresh mint and basil! The combo is so good!

For the Dressing:

  • Olive oil: Use a good-quality extra virgin olive oil for the best flavor.
  • Fresh lime juice: Adds zing and keeps the salad vibrant.
  • Honey: A touch of sweetness to balance the acidity.
  • Garlic: Freshly grate the garlic with a microplane so it blends in nicely.

Tips for Making Peach Cucumber Salad

  • Slice everything evenly so you get a little bit of everything in each bite. A mandoline works great for the cucumber if you have one.
  • Use firm peaches so they don’t get mushy when tossed. If they’re very ripe, slice them gently and add them last.
  • Don’t skip the fresh herbs! Mint and basil are what make this salad feel special.
  • Gently toss the salad. Peaches can be delicate, so toss carefully to avoid bruising the fruit.
  • Add a crunch. If you want, sprinkle chopped pistachios or pepitas on top for texture.

Peach Cucumber Salad

This Peach Cucumber Salad is light, refreshing, and bursting with summer flavor. Made with juicy peaches, crisp cucumber, fresh herbs, and a tangy honey-lime dressing, it’s the perfect side dish for any meal.

For the Salad:

  • 2 peaches, pitted and sliced
  • 1 English cucumber, thinly sliced
  • 2 green onions, sliced
  • 3 tablespoons chopped mint
  • 3 tablespoons chopped basil

For the Dressing:

  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 small clove garlic, grated
  • Kosher salt and black pepper, to taste
  • In a large bowl, combine the peaches, cucumber, green onions, mint, and basil.

  • In a small bowl, whisk together the oil, lime juice, honey, garlic, salt, and pepper.

  • Pour the dressing over the salad and gently toss. Serve.

How to Store: This salad is best enjoyed fresh, but you can store leftovers in an airtight container in the fridge for up to 1 day. Just know that the peaches and cucumber will soften a bit as they sit. If you’re prepping ahead, you can slice everything and make the dressing separately, then toss right before serving.
