Preheat oven to 350F.

Place brie onto a baking sheet, cut-side up. Spread honey evenly over the top of the brie. Spread sugar onto a plate in an even layer. Firmly press the honey side of the brie into the sugar to create a crust.

Preheat broiler. Place brie under broiler and broil for about 1 to 2 minute or until sugar melts and caramelizes. (alternatively, remove brie from oven and brulee top of brie with a hand held torch). Remove from heat and allow sugar to cool and harden, 1 to 2 minutes.

Serve with crostini, crackers, and crudité.
NOTES
- Since this recipe only uses three ingredients, you want to give your brie a little extra attention. Triple cream brie has a rich, gooey texture and should have a light, mild, milky smell. Avoid brie that’s too hard when pressed or smells like ammonia.
- Let the brie sit out at room temperature for 30 minutes before baking to help it melt more evenly.
- Use a sharp knife to cut just the top rind off the wheel of cheese. Leaving the bottom and sides will help hold its shape as it warms.
- Whether you’re using the broiler or a handheld torch to caramelize the honey, watch it closely! In just a matter of seconds, the honey can go from perfectly caramelized to burnt.
