What a lovely nutrition label to match such a delicious recipe. This Single-Serving Pumpkin Pie Baked Oatmeal is my kind of breakfast!
And 11g of filling fiber too — no wonder this cake kept me full for hours! And I have a record fast metabolism. This is definitely going to be a staple meal for me for the next couple of weeks. Yes, weeks. It’s that good. I could most definitely eat this every single day.
I’ve said it before and I’ll say it again: I have a MAJOR sweet tooth. I will always choose sweet over savory, sugar over salt, dessert over dinner… you get the picture.
Truvia and Upworthy came up with this quiz to determine which one of four kindness profiles you belong to — purely sweet, reciprocally sweet, tactfully sweet, and graciously sweet — along with newly designed Truvia Natural Sweetener packets, which now feature their own sweet phrase on every pack. Because everyone deserves a nice lil glimmer of love when you’re adding some packets to your morning coffee.
I took the quiz and got Graciously Sweet. While I wouldn’t say I’m completely selfless (because I hate sharing my desserts, hence why I love single-serving goodies 😉 ), but I do love doing things for people. Whether you’re my friend, my family, or a complete stranger. If you know me in person, I’ve likely given you some Tupperware full of baked goods… many times over. I just made Double Chocolate Banana Bread and gave all the middle slices to my boyfriend. He loves Banana Bread, and especially the middle slices. Probably because they’re the tallest and the fluffiest. I’m totally fine keeping the end slices. It’s still Banana Bread, and it’s still dang delicious. But really now, I made this recipe specifically for my oatmeal-obsessed friend. She loves my single-serving recipes but doesn’t own a microwave, so I made this oven-baked Pumpkin Pie Baked Oatmeal for her!
Did you take the quiz? I’d love to know what sweetness profile you got!
This Single-Serving Pumpkin Pie Baked Oatmeal is the perfect recipe to have on hand.
It’s much faster than baking an entire Pumpkin Pie, and since it’s single-serving, you don’t have to share 😉
Enjoy!
