This Healthy Single-Serving Butterscotch Buckwheat Microwave Muffin Recipe takes only 5 minutes to make, plus it’s sugar free, gluten free, and vegan too!

Single-Serving Butterscotch Buckwheat Microwave Muffin

In my last post I gave you two recipes for Homemade Butterscotch Chips — one that can be baked as it is suitable for high heat applications and one that is meant for no-bake treats because they will melt into caramel-like pockets of goo.  I said that the no-bake version would be a great addition to krispy treats, protein bars and even a bowl of dessert oatmeal…  but, how would the chips hold up to a microwave muffin?

They held up miiiighty fiiiine!  Yes, the chips softened slightly similar to warm caramels, but they definitely didn’t melt into a pool of hot syrup…  like the blondies I tried baking these with…  This healthy Single-Serving Butterscotch Buckwheat Microwave Muffin is absolutely divine, mouthwatering and sweet.  It definitely tastes like a dessert but its health benefits qualifies it for breakfast.  I’m serious.  And it only takes five minutes to make and five minutes to “bake?”  Hell yes.

Healthy Single-Serving Butterscotch Buckwheat Microwave Muffin

  • Spray a 5″ baking dish with cooking spray.

  • In a medium-sized bowl, whisk together the almond milk, applesauce, and ground flaxseed.

  • In a small bowl, whisk together the buckwheat flour, baking powder, sweetener, and salt.  Dump the dry ingredients into the wet ingredients and whisk together.

  • Fold in the butterscotch chips.  Scoop the batter into prepared dish and microwave for ~4 minutes, or until the surface of the cake springs back when tapped. Let cool slightly, then dig in!

*I used the “no-bake version” of my Butterscotch Chips here, but feel free to try out the “bake-able version” too!
