This Healthy Red Velvet Chia Seed Pudding recipe has got the flavor of red velvet cake along with all the healthfulness of chia pudding. WIN-WIN!
It’s sweet with hints of vanilla and cocoa, just like all red velvet desserts should. It’s thick and creamy with that classic crunchy chia seed pudding texture. Topped with natural whipped cream (or coconut whipped cream) plus some mini chocolate chips, and you’ve got yourself one helluva good breakfast.
Or snack. Or dessert. 😉
Healthy Red Velvet Chia Seed Pudding

In a shaker cup, add the chia seeds, cocoa powder, sweetener and salt. Pour in just a ½ cup of the milk. Cover with the cap and shake vigorously.

Add the rest of the milk, beet puree, and vanilla extract, and shake again. Pour evenly into jars, seal tightly, and refrigerate overnight.

Serve and enjoy the next morning!
