This Healthy Nutella Protein Fudge is super sweet, rich, dense and flavorful, but without all the excess sugar, high-fructose corn syrup, heavy cream, and butter!
One bite and you’ll do a double take and ask, “How is this healthy?!”
If you weren’t in the mood for Nutella Fudge before, you will be now 😉
Can you see how fudgy these are?? I’m totally shocked myself and I’m the one who made them.
Even though this fudge is sweet and addictive, it’s sinlessly addictive. Typical fudge recipes are made with a ton of granulated sugar, sweetened condensed milk and/or high-fructose corn syrup… but not this one. Instead of all those sugary nasties I used a combination of mineral-rich raw honey (so delicious!) and stevia extract. Instead of using real Nutella, which is full of artificial flavors and even more added sugar, I used some homemade hazelnut butter, unsweetened cocoa powder, and a couple scoops of protein powder. The result?
Incredibly flavorful, decadent, so-good-it’ll-make-your-eyes-roll-back, Healthy Nutella Protein Fudge.
You need to make this recipe ASAP. It’s super easy and only 6 ingredients. Yes, you’re that close to this fudgy, chocolatey goodness!
Healthy Nutella Protein Fudge
This Healthy Nutella Protein Fudge is super sweet, rich, dense and flavorful, but without all the excess sugar, high-fructose corn syrup, heavy cream, and butter!
-
Line an 8×5″ loaf pan with parchment paper both ways, set aside.
-
In a large mixing bowl, stir together the honey, hazelnut butter, vanilla paste, stevia extract and salt with a rubber spatula.
-
Dump in the protein powder and cocoa powder and stir together. It will get really thick, but that’s normal! You’re just cooking AND getting an arm workout! Once the fudge “dough” is nice and even, scoop the mixture into the prepared loaf pan and flatten it out with the rubber spatula. Cover and refrigerate overnight.
-
The next day, slice the fudge with a sharp knife (I sliced mine into 8 rows down the 8″ side of the pan, and 4 rows down the 5″ side of the pan). Since the fudge is slightly sticky, store the fudge on a sheet of parchment paper on top of a tray, about 1″ apart from each other. Store covered in the fridge.
