If you like caramel, then you’ll most likely like butterscotch. And if you like caramel and butterscotch, I automatically love you 😉
There’s just something about burnt sugar that makes me wanna fall in love… and the same goes with chocolate, peanut butter, cake and frosting…
The major difference between butterscotch and caramel has to do with sugar. Butterscotch is made with brown sugar and caramel is made with white sugar. Butterscotch is also made with butter while caramel is made with heavy cream. Butter is essentially just heavy cream that has gone through some extra processing.
I can dive in that jar right there. Or, just funnel it into my face. Quick. Someone get me a funnel!

-
In a large blender, add the water, butterscotch flavor, vanilla paste, food coloring, stevia extract and salt. Blend on low speed.
-
While the blender is running, remove the opening from the lid (or if your blender doesn’t have an opening, just carefully open the lid) and add the xanthan gum.
-
Once everything is incorporated and completely smooth, pour into pretty serving jars, tightly seal, and refrigerate overnight. Ready to use the next day! Refrigerate to store.

I like to call this Butterscotch Syrup, “Awesome Sauce” 😉
Enjoy!
