
About This Matcha Einspanner
This iced matcha einspanner latte is a modern take on classic coffee einspanners (also known as Vienna lattes)! Traditional Vienna einspanners are made with coffee layered with milk and sweet whipped cream. This einspanner cream is velvety and pillowy soft like a cloud.
My einspanner recipe swaps out the espresso with a shot of matcha, make it a matcha einspanner. The matcha gives the drink its vibrant green color and a delicious earthy flavor to balance out the Vienna sweet cream.

The recipe was inspired by the creamy, cloud-like iced matcha drinks that are currently trending in Los Angeles, CA. I just got back from a trip there and loved the matcha einspanner from Community Goods and the Vienna latte from Yeems Coffee!


Let’s Talk About That Vienna Sweet Cream
The key ingredient to any einspanner drink is that dreamy Vienna sweet cream. The cream should be pillowy and light on its own, forming a soft cloud-like mound that floats when spooned into the drink.
It also shouldn’t melt too quickly into the drink. When stirred in, some of it should still float to form a small cream top on the matcha einspanner. The rest will stir into the matcha and milk to make the drink silky and velvety.

How sweet is Vienna einspanner cream?
The einspanner cream contains a little sugar and salt. It’s a only a little sweet (but maybe too much for the folks who like strong, black coffees?).
That being said, it’s definitely not as sweet as canned whipped cream, ice cream, or other dessert dairy products. And the earthy flavors of the matcha definitely temper it down, making it the perfect sweetness.

How To Layer An Einspanner Latte
Many of the einspanner lattes that inspired my recipe have a distinctly layered look. That is, the einspanner cream doesn’t just sit on top of the latte. Instead, it’s swirled throughout the drink!
I’m embarassed to say that I watched a lot of TikToks (like this one) to figure out how to perfectly recreate a layered einspanner at home. Here’s how to do it:

- The recipe instructs you to whip the heavy cream to “soft peaks.” The best way to see if you have this texture is to do a test with a whisk! Dip the tip of a whisk into the whipped cream, remove it, and quickly turn it upside down. If the cream is too soft, it will slide off the whisk and you’ll need to keep whisking. If the cream has a cloud-like texture with peaks that lose their shape, you’re at the “soft peaks” stage.
- Although the einspanner cream contains sugar, I like to sweeten the matcha for this latte with some additional 5 Minute Simple Syrup Recipe (For Cakes, Cocktails, Drinks). If you don’t like your drink too sweet, feel free to skip the additional syrup! Just note that your matcha won’t drizzle into the drink like mine. Instead, it will float to the top of the drink (similar to how it does in this Iced Strawberry Matcha Latte).
