You can use boneless, skinless chicken breasts, but keep in mind that chicken breasts are leaner and can dry out more easily, so be careful not to overcook them.
- Chipotle peppers in adobo sauce: These give the chicken its signature smoky, slightly spicy flavor. Adjust the amount if you prefer less heat.
- Adobo sauce: Don’t skip the sauce! It adds even more smoky flavor and helps create a smooth, flavorful marinade.
- Honey: Balances the smoky heat from the chipotles and helps create delicious caramelization on the grill.
- Garlic: Fresh garlic adds plenty of savory flavor to the marinade.
- Fresh orange juice: Adds brightness and a subtle sweetness that pairs beautifully with the chipotle and honey.

Tips for Making Honey Chipotle Chicken Thighs
- Give the chicken time to marinate. Even 30 minutes will add great flavor, but you can marinate the chicken for up to 8 hours if you want to prep ahead.
- Use a food processor or blender for the marinade. This creates a smooth marinade that evenly coats every piece of chicken.
- Don’t over-marinate. Because the marinade contains fresh citrus juice, I don’t recommend leaving the chicken in it longer than 8 hours.
- Preheat and oil the grill. Make sure the grill is hot before adding the chicken and lightly oil the grates to help prevent sticking.
- Let the excess marinade drip off. You want the chicken well coated, but removing excess marinade will help prevent flare-ups.
- Use a meat thermometer. Grill the chicken until the thickest part reaches an internal temperature of 165°F.
- Let the chicken rest. Give it a few minutes to rest before serving so the juices can redistribute.
- Make the slaw while the chicken marinates. This makes dinner feel especially easy! You can refrigerate the slaw until you are ready to serve.
- Taste the slaw before serving. Depending on the sweetness of your peach and orange, you may want to add an extra squeeze of lime juice, a little more honey, or additional salt and pepper.
How to Store
- Store leftover chicken and peach slaw in separate airtight containers in the refrigerator for up to 4 days.
- Reheat the chicken gently in the microwave or in a skillet until warmed through. The slaw is best served cold. Keep in mind that the cabbage will soften and the peaches will release some juice as the slaw sits, but it will still be delicious the next day.
- For the best texture, I recommend enjoying the peach slaw within 1 to 2 days.
- You can also freeze the cooked chicken for up to 3 months. Let it cool completely, place it in a freezer container, and freeze. Thaw overnight in the refrigerator before reheating. I don’t recommend freezing the peach slaw.




Honey Chipotle Chicken Thighs with Peach Slaw
Juicy Honey Chipotle Chicken Thighs are marinated in a sweet, smoky, and slightly spicy chipotle honey marinade, grilled to perfection, and served with a fresh and crunchy peach slaw. An easy and flavorful summer dinner!
For the chicken:
- 2 pounds boneless, skinless chicken thighs (about 8 pieces)
- 2 chipotle peppers in adobo sauce
- 1 tablespoon adobo sauce
- 3 tablespoons honey
- 2 cloves garlic, minced
- 1 tablespoon fresh orange juice
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/4 cup avocado oil or olive oil
For the peach slaw:
- 2 cups shredded green cabbage
- 2 cups shredded red cabbage
- 1 large peach, chopped
- 1 cup diced cucumber
- 2 green onions, chopped
- 1/3 cup chopped fresh cilantro
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 1 tablespoon fresh orange juice
- 1 tablespoon honey
- Kosher salt and black pepper, to taste

Make the Marinade. In a blender or food processor, combine the chipotle peppers, adobo sauce, honey, garlic, orange juice, cumin, paprika, salt, pepper, and oil. Blend until smooth.

Marinate the Chicken. Place the chicken thighs in a large bowl or zip-top bag and pour the marinade over the chicken. Toss to coat well. Cover and refrigerate for at least 30 minutes or up to 8 hours.

Make the Peach Slaw. In a large bowl, combine the cabbage, peach, cucumber, green onions, and cilantro. In a small bowl, whisk together the olive oil, orange juice, lime juice, and honey. Pour the dressing over the slaw and toss until evenly coated. Season with salt and black pepper to taste. Refrigerate until ready to serve.

Grill the Chicken. Preheat a grill to medium-high heat and lightly oil the grates. Remove the chicken from the marinade, letting the excess drip off. Grill for 5 to 7 minutes per side, or until the chicken is nicely charred and the internal temperature reaches 165°F.

Variations
- Chicken breasts. You can use boneless, skinless chicken breasts instead of chicken thighs. Keep in mind that chicken breasts are leaner and can dry out more easily, so be careful not to overcook them. Cook until the thickest part reaches 165°F. For more even cooking, you can pound larger breasts to an even thickness before cooking.
- Make it less spicy. Use just one chipotle pepper and a little adobo sauce for a milder marinade.
- Turn up the heat. Add an extra chipotle pepper or serve the chicken with additional chopped chipotles on the side.
- Use chicken breasts. You can use boneless, skinless chicken breasts instead, but adjust the grilling time as needed.
