Whenever I buy a bunch of bananas I always always always have a few leftover that I don’t feel like eating plain on their own.  And sometimes I just don’t have the time to bake a whole loaf of Banana Bread.  So I make this super quick and healthy Single-Serving Peanut Butter Banana Microwave Cake!

Healthy Single-Serving Peanut Butter Banana Microwave Cake

You can make this Healthy Single-Serving Peanut Butter Banana Microwave Cake in 5 minutes flat. You’d never know it’s sugar free, gluten free, and vegan!

  • 1 tbs Ground Flaxseed
  • cup Unsweetened Vanilla Almond Milk
  • cup Mashed Banana
  • 2 packets Natural Sweetener (steviaTruvia, etc.)
  • tsp Salt
  • 30g (¼ cup) Oat Flour
  • 30g (¼ cup) Peanut Flour
  • 1 tsp Double-Acting Baking Powder
  • In a medium-sized bowl, stir together the flax, almond milk, and mashed bananas, sweetener, and salt.

  • Stir in the oat flour.  Add the peanut flour and stir well, making sure there are no clumps (stir ~1 minute).

  • Last, stir in the baking powder, then pour into a 5″ baking dish and microwave for ~5 minutes + 30 seconds. Let cool slightly and dig in!

Now that’s what I call a balanced breakfast lunch and dinner and dessert!  With only 9g of healthy fats, 12g of fiber and 24g of complete protein, you sure can’t go wrong.  Far better than typical microwave cakes, which can have a whopping 72g of fat (!!!), plus refined flour, and white sugar.

Takes a few minutes to make and a few minutes to “bake.”  Run to your microwave.  NOW!  😉
