If you’re anything like us, there are two big seasons going on at your house right now: Christmas (or Hanukkah) and Football.
I’m way more into the holidays than I am into watching football, but luckily both things come with great food.
One of my favorite things to make for any party, but especially game-day parties, is a good dip. From buffalo chicken dip to spinach artichoke dip to spicy sausage dip, they’re one of my very favorite foods.
I mean, they’re easy to make and impossible to stop eating. A win/win in my opinion!
This fiesta ranch dip is definitely making it onto all of our game-day menus this year. It’s super easy and incredibly flavorful and is guaranteed to disappear *snaps* like that.


WHAT IS FIESTA RANCH DIP?
Fiesta ranch dip is exactly what it sounds like it might be: it’s ranch dip taken to a new, zesty level.
This dip takes your favorite ranch seasoning and adds ingredients like Rotel (diced tomatoes mixed with green chiles), corn, and cheddar cheese for a dip that is creamy, zesty, and incredibly dippable.
My version also includes black beans – because what goes better with corn and Rotel than black beans?
I also added some bacon bits to mine. This is totally optional, but I do love the smokiness they add to the dip. Just make sure to leave them out if any of your party guests are vegetarians!
This fiesta ranch dip makes for an awesome appetizer at any party, whether it’s a holiday gathering or game-day watch party. Just try not to eat it all before your guests arrive!Â


HOW TO MAKE FIESTA RANCH DIP
This is one of those dip recipes that comes together in absolute no time. The hardest thing about this recipe is letting it chill for a couple of hours before diving in!
Ingredients you’ll need
This recipe makes a big batch of fiesta ranch dip, so you’ll have plenty to feed all of your hungry party guests.
To make it, you will need:
- 16 ounces sour cream
- 2 tablespoons homemade ranch seasoning mixÂ
- 1 can sweet corn
- 1 can black beans, drained and rinsed
- 1 can Rotel, drained
- 1 cup shredded sharp cheddar cheese
- ¼ cup cooked and finely crumbled bacon or bacon bits (optional)
- Salt and pepper to taste


I love using my homemade ranch seasoning for this recipe. It’s great in everything from classic ranch dip to bacon ranch pasta salad to Mississippi pot roast.
If you don’t have any of the homemade stuff on hand, feel free to use a 1-ounce packet of store-bought ranch mix instead.
For the canned corn, beans, and Rotel, I recommend looking for the no-salt-added versions. This, along with using my homemade ranch seasoning, will allow you to better control the amount of salt in your final dip.Â
If you can’t find the no-salt-added versions, just keep in mind that you may not need to add much (if any) salt to the final dip.Â


Making my fiesta ranch dip
You ready to see how easy making this dip is?
Combine all of the ingredients in a big bowl and mix to combine. Give it a taste, then add salt and pepper as desired/needed.
Now, here’s the hard part: cover and chill the fiesta ranch dip for at least 1-2 hours before serving. This will allow all of the flavors to meld and it’ll be so much better after it has chilled!


SERVING SUGGESTIONS
I like serving fiesta ranch dip with either corn chips, such as the Fritos Scoops, or tortilla chips.
Or, you can do my secret favorite thing, which is to serve it with nacho cheese Doritos. I said what I said – it’s incredible.
Of course, you can always put out some fresh veggies to go with it. Sliced bell peppers would be especially good!Â


RECIPE VARIATIONS
Dips are always fun to make because they’re easy to make your own, and this fiesta ranch dip is no exception.
Consider my ingredients list as a starting point. Remember how the bacon is optional? That’s just the beginning!
Try swapping out a different cheese for the cheddar cheese. Shredded pepper jack or a Mexican blend would both be delicious.
You can also swap the canned sweet corn for fire-roasted corn for some additional smokey flavor.
