I used to think Coffee Cake was a coffee-flavored cake. I mean, wouldn’t that make sense?? But apparently it’s not. It’s just a cake that’s meant to be enjoyed with a cup of coffee.
While there are countless recipe variations, Coffee Cake usually consists of a basic Vanilla Cake with a layer or two of cinnamon-sugar, which is sometimes topped off with a crumble or streusel.
But, being the lazy butt that I am, I wanted all the flavors of Coffee Cake without all the effort and time waiting for it to slowly bake away in the oven.
So I made an instant microwavable Coffee Cake.
A HEALTHY instant microwavable Coffee Cake.
It starts off with a basic Single-Serving Vanilla Cake which is then filled with a cinnamon-sugar swirl inside, plus a cinnamon-sugar topping for extra flavor. And in case you haven’t guessed it already… IT IS DELISHHH 😀
Healthy Single-Serving Microwave Coffee Cake
This Healthy Single-Serving Microwave Coffee Cake is super soft, fluffy, moist, and delicious, yet sugar free, low carb, high protein, and gluten free!
Coffee Cake
- 28g (¼ cup) Coconut Flour
- 3 packets Natural Sweetener
- ½ tsp Double-Acting Baking Powder
- pinch of Salt
- 105g (7 tbs) Unsweetened Vanilla Almond Milk
- 62g (¼ cup) Unsweetened Applesauce
- 1 large Egg
- 1 tsp Vanilla Extract
- ½ tsp Natural Butter Flavor

In a tiny bowl, stir together the cinnamon and packeted sweetener. Set aside.

In another bowl, whisk together the coconut flour, packeted sweetener, baking powder and salt.

In a larger bowl, whisk together the almond milk, applesauce, egg and extracts. Dump the dry ingredients over the wet ingredients and whisk together.

Pour half of the batter into a large mug, then sprinkle on about half of the cinnamon-sugar mixture. Pour the rest of the batter in the mug, then sprinkle on the remaining cinnamon-sugar mixture.

Microwave for 4 minutes, or until the surface springs back when tapped. Let cool, then enjoy!
